RE-SET, GO!

Sometimes things get away from us and we find ourselves feeling a little lackluster and in need of a body reset. When I find myself feeling like this I tend to find myself snacking.

 

And what I call snacking is inhaling anything and EVERYTHING. But over the years I have become more aware of the fact that when I find myself succumbing to the munching monster within it usually means Iv'e been slacking on getting my body the foods and nutrients its really craving. So now when I feel like cruising through the cabinets to munch on empty calories I make my

RESET MEAL .

 

I start with a bowl of rough chopped kale then top with garlic roasted beets and sweet potatoes, protein (usually grilled chicken unless I am taking a break from meat in which case I make two fried eggs over easy), and then I top it all off with my favorite homemade apple cider honey vinaigrette dressing. This usually satisfies my cravings to munch and overeat (and its delicious)! 

 

WHY, YOU ASK?

WELL...............

 

BEETS: beets contain fiber, folate and vitamin C. They also contain nitrates and pigments that (according to some studies) may help lower blood pressure and improve athletic performance

 

SWEET POTATOES: are high in vitamin B6, vitamin C and vitamin D (which helps build healthy bones) They also contain iron and magnesium (which is the relaxation and anti-stress mineral). And they are delicious

 

APPLE CIDER VINEGAR: where to begin.....it can be used for: weight loss, reduced cholesterol, lower blood sugar levels and improved symptoms of diabetes. It also is said to improve skin health, detoxify the digestive system, as well as enhancing circulation (if you have cold hands and feet like me this is a great one!)

 

KALE: contains fiber, antioxidants, calcium, and vitamin K. It is also a good source of vitamin C and iron

 

HONEY: Antioxidant Powerhouse. These antioxidants help block free radicals in the body that cause diseases. It also boosts the immune system, acting as a preventative against any number of health concerns. 

 

GARLIC: the main ingredient in garlic is allicin, which has antibacterial, antivirus, anti-fungal, and antioxidant properties that help keep your body healthy. It helps blood flow, lowers cholesterol, and stops heart disease.

 

 

RECIPE:

 

To make this meal simply chop the beets and sweets into cubes, coat in olive oil, add salt, pepper, and garlic to taste. Pop them in the oven on an aluminum foiled pan (425F) for about 45 min stirring occasionally to prevent sticking. 

 

 

While your veggies are cooking mix up your salad dressing:

 

1 garlic clove , minced.

1 tablespoon Dijon mustard.

1/4 cup raw apple cider vinegar.

2 tablespoons fresh lemon juic.

1-2 tablespoons raw honey , as needed for sweetness.

1/3 cup extra-virgin olive oil.

salt and pepper , to taste.

 

When your veggies are done remove from the oven and allow to cool while you chop the kale and cook your fried eggs. Finally: add beets, sweets, and eggs to your chopped kale, top with salad dressing and Enjoy!
